Production of Anjeer
Generally, dried figs are dried in either traditional or mechanized ways. In Estahban, drying is mostly done in the traditional way, which we will introduce later. In this way, they do not separate the figs from the tree after ripening and let the figs remain on the tree. This way, without the need for any chemicals and naturally, these fruits dry. Another advantage of this way is that the white color of the figs is preserved.
Dried figs, like other popular products, are classified into several categories, such as:
1. Size
Based on the size, Estahban dried figs are divided as follows: AAA: with a diameter of more than 22 millimeters AA: with a diameter of between 18 and 22 millimeters A: with a diameter of between 14 and 18 millimeters B: with a diameter of between 8 and 14 millimeters C: with a diameter of fewer than 8 millimeters.
2. Color
- Based on color, dried figs are divided into groups: Among the dried figs, the whiter color indicates a higher quality, so the white figs are called the high-quality group. The next group is the figs that have a color between white and yellow but are not spoiled.
- The next group is the figs which have spots or darkness and they are called the weak group in terms of quality. This group also does not have any defects or damage, but the last group is called the waste of figs. This group has damage and crushing in addition to darkness.
- Based on how open the end is dried figs are also divided: The figs that have less blooming at the end are called buds. The next group, which has more blooming than the previous group, is called sad-o-yek or 101. And the last group, which has the most blooming, is the best type of fig in this kind of packaging.
How to store dried figs?
Estahban figs can be stored for a long time as a dried fruit. Of course, to increase its shelf life and prevent its quality from decreasing, it is better to store this product in a dry and cool environment. Moisture and heat can cause mold and spoilage of the dried figs. To prevent Estahban figs from becoming hard and dry, it is better to keep them in sealed containers and in the refrigerator. This helps to preserve the moisture in the dried figs.

India is known as the largest buyer of dried figs in the world. After India, countries such as the United States, France, Germany, Italy, Britain, Russia, Saudi Arabia, Canada, and Belarus can be mentioned.
