If we harvest the pistachio before it is completely ready, we call it unripe pistachio. Because these pistachios are still unripe, their color is greener than ripe pistachios. This pistachio is known as Kaal pistachio kernels in Iran. (Kaal means unripe)
- Kaal pistachio kernel can be considered the most expensive type of pistachio kernel.
- Since this pistachio is harvested before it is fully ripe, it weighs less and is smaller than the ripe pistachio.
- Farmers usually harvest ripe pistachios instead of unripe pistachios due to their lower weight.
- In some cases, farmers can harvest some unripe pistachios and sell them to get income earlier and save the maintenance costs of other pistachios.
Uses of kaal pistachio kernel
This pistachio is used in different ways because of its green color.
For example, in food design, dessert, and sweet designs (in the form of slices, powder, and pistachio pieces). One of the most famous uses of this pistachio is in baklava. research has found that unripe pistachios have more protein than ripe pistachios, and it seems that the greener the pistachio is, the more protein it has. instead, it has less fat than ripe pistachios.
Sometimes the skin of this type of pistachio is peeled with special methods to reveal its green color, which is called Green Peeled Pistachio Kernel.
Harvesting time
This type of pistachio is harvested in July and August.
How to store unripe pistachios kernels?
To preserve its color and taste like other types of pistachios, it should be stored in glass or plastic containers, cool, dry, and away from sunlight.
Export
Most of these pistachios are exported to European countries such as Germany, Italy, and Switzerland, and then to Arab countries, Turkey and India.
