Appearance
Kashmar golden raisins are very popular among buyers due to their beautiful color and elongated shape. These raisins are produced from Paykami grapes, a variety of seedless grapes. The length of each grain of golden raisins is between 2 to 3 centimeters and they have a moisture content of about 15 percent.
Production of Kashmar Golden Raisins
The difference between the green and golden raisins of Kashmar is in their drying method. Golden raisins are dried by a sulfur fumigation process. In this method, after picking the grapes, they are hung in a roofed environment and exposed to smoke from burning sulfur for a few hours. The sulfur smoke makes the grapes turn golden yellow and shiny. This method is one of the fastest ways to dry grapes and produce raisins. Of course, it should be noted that excessive exposure to sulfur dioxide can cause health risks.
How to store golden raisins?
Keep golden raisins in a container or sealed bag and store them in a dry and cool place away from sunlight. Avoid storing raisins in a warm and humid place as it may cause spoilage, mold growth, and moldiness. Before eating and consuming raisins, wash them with cold water and then test their smell and color, if they were not natural it is better not to use them. The shelf life of raisins in a ventilated environment is about one year. If you want to keep the raisins for a longer period of time, it is better to store them in a refrigerator.
Export
This type of raisin is one of the most exported types of raisins from Iran. Some of the main importers of these raisins are countries in the Middle East, Europe, and Asia.
The maximum amount of sulfur smoke that is allowed in some countries is 1500 ppm. Of course, most European countries accept a lower amount than this number. Therefore, if the amount of smoke given to a raisin is more than this amount, there is a high probability that the whole load will be returned or even erased
