Maviz Raisins
In general, raisins are obtained by drying grapes. Maviz is a type of raisin. This delicious dried fruit is one of the most expensive types of raisins. Their taste, color, and quality have made them highly requested by customers in catering and food consumption. The difference between maviz and other types of raisins is their size and color.
The appearance of Maviz Raisins
Maviz raisins are larger than raisins and depending on the grape used in its preparation, it can be seeded or seedless. For the production of maviz, they use a variety of royal grape called Shahani grape. This type of raisin has a round shape and a dark color. The size of this kind of raisins depends on the type of grape from which they are dried, but usually, they are about 1 to 2 cm in diameter. Their surface is furrowed and wrinkled and the outer layer is resistant and dry. The weight of the seeds depends on various factors, but it can be roughly said that each seed weighs about 0.5 to 1 gram.
Production
Maviz can be prepared from two types of Shahani grapes, red and black. They can be dried in two ways, mechanized and traditional.
1. To dry in the traditional way, after washing, the harvested grapes are tied to metal straps or wires and hung from a certain height. This allows air to circulate around the grapes and the grapes dry after some time in the weak sunlight or in the shade.
2. In the mechanized method, after washing the grapes and packing and storing them in cold stores, they are placed in certain volumes in special devices to reduce their moisture content. Next, in another device, the grape stems are removed from the berries that must be turned into maviz, and the berries are washed again before the next steps. In the next machines, these raisins are dried until they reach 8% moisture, and maviz are obtained at the end.
This kind of raisin is packed without manual intervention and fully mechanized and supplied to domestic and foreign markets. In Iran, this product is mostly produced in the provinces of Qazvin, Hamadan, Markazi, Azarbaijan, and Khorasan.
How to store Maviz Raisins?
1. place them in a closed and dry container to prevent exposure to air and moisture.
2. store them in a cool and dark place to prevent color and flavor changes.
3. smell the maviz and see that it does not smell sour or musty.
These raisins can be stored at room temperature for almost one year, but it should be noted that they may become dry and dark. If you keep raisins in a closed container in the refrigerator, you can keep them for about 2 years.

Maviz, as well as other grape products, is an export product that has a good market and many fans around the world. Some of the main importers of this product are Russia, Netherlands, Germany, Great Britain, France, Canada, and Brazil. This product is also imported by many other countries and this list changes every year.
