Appearance
Sultana Malayer is one of the best-selling export items in Iran, and the city of Malayer in Hamedan province is the hub of production and export to the world. This raisin is found in either yellow or brown colors. Sultana is made from seedless grapes and has a round and oval shape; its size is about 2 centimeters. The surface of these raisins is shiny.
Production of Sultana Raisins
Sultana Malayer raisins are produced in that they first pick and wash the seedless grapes in late summer in the month of Shahrivar from the gardens of Malayer. Then they mix the grapes with the acid and place them in ropes or smooth surfaces to dry. The acid causes the grapes to lose their water and moisture faster and turn into raisins. Then they produce raisins in two ways. First, the sulfur smoke method uses this smoke to make the raisins yellow and shiny, and second, the non-sulfur method, which produces brown raisins with less shine. This process of converting grapes to raisins takes about 30 days.
How to store Malayer Raisins?
To store sultana Malayer raisins, seal them in a container or bag and keep them in a cool and dark place. To keep them fresher, you can put them in the refrigerator. By doing this, you can keep them fresh for a longer time.
